Italian Roast Chicken by Gio DiMara
Ingredients:
- 1 whole chicken (about 1.8kg - 2kg)
- Olive oil
- Fresh rosemary sprigs
- Fresh thyme sprigs
- Garlic Cloves
- Salt and pepper to taste
- 2-3 carrots, washed and chopped into large 5cm chunks with skin on and ends off
- Half Kent pumpkin - washed and chopped into 5cm large chunks with skin on. Discard seeds
- 2-3 potatoes, quartered
Instructions:

Preheat the Oven: Preheat your steam oven to 190°C with the forced air + steam option selected (375°F).

Prepare the Chicken: Rinse the chicken inside and out under cold water and pat it dry with paper towels. Place the chicken on a cutting board or in a large bowl.

Season the Chicken: Place the chicken into a bowl. Rub the entire chicken with olive oil. Season generously with salt, pepper, crushed garlic and fresh chopped herbs end ensure all cavities are covered for maximum flavour. Stuff the cavity with the lemon halves, a few sprigs of rosemary, and thyme. Place the chicken on a oven rack - but not inside the oven.

Prepare Potatoes: Cut and peel potatoes and place them in a pot of water. Boil them for 5 minutes on your Whirlpool Induction Cooktop then drain and pat dry.

Arrange the Vegetables: Chop your vegetables and place into a bowl. Drizzle with a little olive oil and season with salt and pepper. Mix well. Arrange In a roasting tray and place into your preheated oven onto a lower rack.

Roasting Potatoes & Chicken: Place your potatoes onto another roasting tray. Drizzle with olive oil and season with salt and pepper. Place the prepared tray onto a shelf above the vegetables. Place your chicken on top of the prepared vegetables inside your oven allowing the juices from your chicken to flow onto the potatoes.

Roast the Chicken: Roast the chicken and vegetables for about 40 minutes with extra browning which is a pre set function on your Whirlpool Oven. or until the chicken is golden brown and the internal temperature reaches 165°F (75°C).

Rest and Serve: Remove the chicken from the oven and let it rest for 10-15 minutes before carving. Serve the chicken with the roasted vegetables and pan juices.
